Tips

Toasting pecans

For toasted pecans, preheat the oven to 325 degrees. Place pecans in an even layer on a baking sheet lined with parchment. Bake for 7 to 10 minutes tossing halfway through. Watch carefully to ensure they don’t burn

keeping waffles warm

When cooking waffles for a group, keep the first batches warm by transferring them to a wire rack set over a baking sheet. Hold them in an oven preheated to 200F (95C) while you finish making the rest. The rack allows air to circulate, preventing soggy waffles.

Waffle makers or not

I have a standard Breville nonstick waffle maker. Depending on you preferences you should adjust head settings accordingly. Because these are whole grain, with pecans in them the waffles will be darker than normal.

For deeper waffle makers make sure you grease the edges with either butter or spray. Adding butter sort of gives you a brown butter base, you can drop the waffle batter in. Which produces amazing flavor. Listen to your waffle maker, it will let you know if you’re waffles are done or not. The thicker the waffle maker the fluffier they will be.

Gather

  • 1 stick butter, browned or melted
  • 2½ cups whole wheat flour (all-purpose flour also works)
  • 3 tablespoons brown sugar
  • 3 tablespoons granulated sugar
  • 2 tablespoons baking powder
  • 1 teaspoon salt
  • 2 teaspoons cinnamon
  • ½ teaspoon nutmeg
  • ¼ teaspoon ginger
  • 2 cups buttermilk
  • 1 cup whole milk
  • 4 eggs, separated
  • 2 tablespoons vanilla extract
  • 1 cup finely chopped toasted pecans, plus extra for topping, if desired (see tip below)

Follow

  1. To brown the butter, add butter to a small saucepan. Turn to medium heat. The butter will begin to fizzle and foam; if it starts popping or bubbling, turn the heat down to medium-low. Continue cooking, swirling occasionally, until it begins to produce a fragrant nutty smell and brown bits start to appear.Remove from heat, and pour into a heatproof bowl, scraping any brown bits.
  2. Combine all dry ingredients together in a bowl.
  3. In a separate bowl, combine buttermilk, milk, egg yolks, vanilla extract and browned butter.
  4. Combine mixtures: Gently fold wet ingredients into dry ingredients. Do not overmix; lumps are OK..
  5. Beat egg whites with a fork until they are frothy. (If you have a waffle maker that makes thicker waffles, I suggest beating the egg whites until they form stiff peaks.)
  6. Gently folk in egg whites and chopped pecans with combined ingredients.
  7. Pour the batter into your heated waffle iron and cook until golden brown.
  8. Enjoy your waffles topped with additional chopped pecans, butter or your favorite syrup.
