While your butcher can usually do this for you, here’s a quick guide if you can’t find a pre-frenched rack. Don’t worry, frenching is purely for presentation and won’t affect the taste. However, it may slightly increased cooking time due to less fat. Frenching simply means removing excess fat around the ribs. Follow these steps for a nice frenched rack of lamb
- Grab a sharp knife.
- Score the fat around each bone with the tip of the knife. This creates a guideline for trimming.
- Work on one rib at a time. Using your knife, carefully scrape away the excess fat from the bone, aiming for a clean surface.
- Repeat until the entire rack is cleaned.
That’s it! You now have a beautifully frenched rack of lamb ready for cooking.

Gather
- 2 racks of lamb, frenched
- Kosher salt and freshly cracked black pepper
- 5 garlic cloves; minced
- 2 sprigs fresh rosemary, chopped
- 5 to 8 sprigs fresh thyme, chopped
- ¼ cup fresh flat-leaf parsley
- 1½ tablespoon extra-virgin olive oil or vegetable oil
- Juice from 1 to 2 blood oranges
Follow
- Heat oven to 350 degrees.
- Pat dry the rack of lamb (trim excess fat if desired) and generously season all over with salt and pepper.
- Prepare garlic herb mixture: Mix garlic, rosemary, thyme, parsley and olive oil in a bowl. Season with salt and pepper.
- Heat pan over medium to medium-high heat. Sear the lamb, fat side down, until browned, 8 to 10 minutes.
- Transfer to a rimmed baking sheet. Brush generously with blood orange juice. (You don’t need to use it all, but give it a good bush.) Place herb mixture on top of lamb, sticking it to the fatty side as best you can. Distribute evenly across both racks.
- Roast in the oven for 15 to 25 minutes, or the internal temperature reaches 125 degrees. Once removed from the oven, let it rest for 5 minutes.
- Cut and serve with your favorite sides and enjoy an Easter feast with your family!
