To create a silky smooth drinking chocolate, the milk and cream ratios work for chocolate that is 70% or more. If you use semie sweet chocolate, you will get a different result.

Gather

  • 4 cups whole milk
  • 1 cup heavy cream
  • 16 ounces high-quality dark chocolate (at least 70% cocoa), chopped
  • 1/2 cup granulated sugar (adjust to taste)
  • 2 teaspoons pure vanilla extract

Follow

  1. In a medium saucepan, combine the whole milk and heavy cream over medium heat. Heat the mixture until it begins to simmer but avoid boiling it. Stir occasionally to prevent scorching.
  2. While the milk and cream are heating, place the chopped dark chocolate in a heatproof bowl.
  3. Once the milk and cream mixture is simmering, remove it from the heat and pour it over the chopped dark chocolate.
  4. Allow the hot milk and cream to sit on the chocolate for a minute or two to melt it. Then, gently stir with a whisk until the chocolate is completely melted and the mixture becomes smooth and velvety.
  5. Return the mixture to the saucepan and place it back on the stove over low heat. Add the granulated sugar, vanilla extract, and a pinch of salt. Stir continuously until the sugar is fully dissolved and the mixture is heated through, but do not let it boil.
  6. Taste the drinking chocolate and adjust the sweetness if needed by adding more sugar, one tablespoon at a time, and stirring until it dissolves.
